We used our limited edition Tacle Mandarin Marmalade to create this Mandarin Sponge Pudding- perfect for these cold winter days!
The recipe is SO quick and easy to make in a microwave - the best quick dessert when you have unexpected guests or just don’t want the hassle(!) - but for those who do not have microwaves, we've included instructions at the bottom for steaming on the stove.
If the Tacle Mandarin season is over (it's a short one!) then don't panic! The recipe is brilliant with ANY of our preserves so simply swap the mandarin preserve for whichever one you fancy.
Mandarin Microwave Sponge Pudding

Ingredients

125g salted butter, melted

125g caster sugar

1 tsp vanilla paste

2 large free range eggs

125g self raising flour
-
30g ground almonds
-
1/2 tsp ground cardamom

1 tbsp milk

125g Tacle Mandarin Preserve
-
Custard, cream or ice cream

1.2 litre/2 pint pudding basin, liberally greased

TO SERVE:
YOU WILL NEED:
Directions
In a bowl, combine the melted butter, sugar and vanilla before whisking in the eggs. Sieve in the flour, ground almonds and cardamom and fold into the butter and eggs using a metal spoon.
Pour in the milk and stir to form a smooth batter. Spoon the mandarin preserve into the bottom of the greased pudding basin before slowly and gently pouring over the batter mixture trying to disturb the preserve as little as possible.
Wrap the pudding basin a couple of times with clingfilm before piercing the top a couple of times to allow the steam to escape when cooking. Place in the microwave (900w) for 3 1/2 minutes before allowing to sit for a further 3 minutes to continue cooking.
When ready to serve, remove the clingfilm, being very careful of any escaping steam. Run a knife around the top of the basin to gently release the sponge, before carefully turning out on your serving plate allowing the warmed mandarin preserve to drip down the sides of the cooked sponge.
Serve alongside custard, cream or ice cream depending on your preference!

1. Spoon the mandarin preserve into the bottom of the greased pudding basin before slowly and gently pouring over the batter mixture trying to disturb the preserve as little as possible.
2. Wrap the pudding basin tightly a couple of times with clingfilm before piercing the top a couple of times to allow the steam to escape when cooking.
3. Put an upturned heatproof sauce, metal cookie cutter or small trivet in a large, deep saucepan and place the pudding on top. Add boiling water to the pan until it comes halfway up the side of the basin.
4. Cover the pan with a tight-fitting line and place over a low heat allow the pudding to steam gently for approximately 1.5 hours. Add more water to the pan if necessary as you don’t want the pan to boil dry.
5. When the sponge has cooked through, very carefully remove the basin from the sauce pan and allow to stand for approximately 5 minutes.
6. When ready to serve, remove the clingfilm, being very careful of any escaping steam. Run a knife around the top of the basin to gently release the sponge, before carefully turning out on your serving plate allowing the warmed mandarin preserve to drip down the sides of the cooked sponge.
7. Serve alongside custard, cream or ice cream depending on your preference!
