We use fresh Tacle Mandarins for this special marmalade. Grown by Carmelo in his groves at the foot of Mount Etna in Scordia, Sicily.
Rarely found outside Italy, Tacle are a cross between a Tarocco Blood Orange and a Clementine. Abandoned by commercial growers for their low yields, the variety survives thanks to Carmelo’s belief in its singular qualities: the seedless, highly sugared flesh of a Clementine paired with the vivid pigmentation and complexity of a Blood Orange.
We work with Natoora in the UK, who import Carmelo's mandarins within four days of being picked, unwaxed and with leaves still attached, a final marker of freshness and Carmelo’s uncompromising approach.
Once in the Jam Factory, we slice to a medium shred and then cook the mandarins slowly to soften. We add sugar then boil quickly, adding some lemon juice once ready to help bring the fresh mandarin flavour out.
The resulting mandarin marmalade as a lovely spoonable soft set. The flavour is sweet, tangy and not too bitter at all (it's a perfect marmalade for non-marmalade lovers!)
Each jar contains 225g. Suitable for vegans and vegetarians.

We use just one variety in each of our products - showcasing the unique flavour, colour and aroma of that single variety. Hence the name!
About Natoora
Natoora was founded by Franco Fubini in 2004 in a bid to restore flavour, transparency and seasonality to a broken food system. Since then, the company has created a growing community that connects responsible growers and their seasonal produce with the most influential chefs in London, Paris, New York, Copenhagen, Melbourne and beyond.
With people on the ground throughout Europe and America, Natoora are able to source varieties directly from growers, often not able to reach commercial markets. Committed to seed selection, traditional growing techniques and exceptional flavour, they’re driving a food system revolution that elevates the growing artistry of committed producers to its rightful place.

Excellent 10/10
Absolutely delicious! I used to make my own marmalade…….. don’t think I’ll bother anymore. 😍
Based on the description I was expecting a sweet tangy marmalade. Unfortunately it is still rather bitter and off putting for ‘non marmalade lovers’. I like the consistency and the peel isn’t too hard, but the flavour isn’t for me! Shame as I bought two but will be giving the second away.
First time trying this marmalade and i like it, very tasty.
Delicious not-too-sweet marmalade
Tastiest marmalade ever
Yummy
Gorgeous!
OMG Ive come over all ''When Harry met Sally''I dont really eat marmalade, it's too hard set and I hate peel. I decided to try this because the sales blurb suggested I might like it. It's soft set so doesnt sit on your toast like a jelly it's not too sweet and not bitter. The taste explodes on your toungue like a summer day in the Med. The peel was more like bits of fruit, I ate it and I liked it. I liked it so much Ive ordered another 3 jars before it runs out. I now have a shelf full of Rhubarb jam and tacle marmalade and I'm not sharing lol
Soft set so if you normally don’t like marmalade because it’s so thick or a more hard jelly like set this one is for you. Honestly really delicious only slightly bitter with refreshing citrus notes
Nicola founded Single Variety Co from her kitchen table with the aim of creating a range of seriously delicious fruit preserves and chilli jams. She carefully selected the finest ingredients, British where possible, and packed each jar full of as much fruit as possible with much less sugar than traditional jams. These aims remain the same today in our little jam factory in Bristol - as if Nicola had made them from home! Which is why we work closely with our local suppliers and take great pride in delivering to you the very best products we possibly can.
