Amarillo Chilli Chicken Burgers with Spicy Mango Slaw
It's BBQ season! If you're looking for something different to the usual supermarket burgers and hot dogs I can highly recommend this recipe. The chicken burgers are easy to make and the slaw, just wow! It's fresh, light and full of flavour. Once you've made your own slaw I don't think you can ever go back to shop bought (I tried, and I'm always disappointed), so be warned!
But, if you don't have time to make the recipe, you can always just pop our Amarillo Chilli Jam on whatever you're cooking on the BBQ. We haven't fuond anything it doesn't go with yet!
Amarillo Chilli Chicken Burgers with Spicy Mango Slaw
In a bowl add the chicken mince, chilli jam, coriander, garlic granules, onion powder and breadcrumbs before seasoning generously with salt and pepper.
Using clean hands, combine the mixture until all the ingredients are incorporated before dividing into 4 equal balls. Squash flat into roughly 10cm patties and place on a lined baking sheet.
Bake in a preheated oven at 200C/180C fan/gas 6 for 15 - 20 minutes until starting to caramelise and are cooked through. Alternatively, grill on either side for 4 - 5 minutes either under a grill or on a bbq.
Whilst the burgers are cooking, make the slaw. Place the thinly sliced spring onions, mango and carrot in a bowl along with the chopped coriander. Spoon in the chilli jam before adding the juice and zest of the lime. Stir to combine all the ingredients.
When ready to serve, place the cooked burgers in a pre-toasted bun and top generously with with the mango slaw and finally the bun lid.
