We use Black Bursa Figs to make this figgy, delicate preserve. It's not too sweet, and full of juicy chunks of fig. The Black Bursa variety is large, juicy and full of flavour: making it the perfect variety for this product.
We cook the figs carefully in small batches for the shortest time possible to preserve their figgy flavour. Then we add sugar (not too much, this isn't a sweet jam), and fresh lemon juice for the right level of acidity.

Giant Black Bursa Fig Preserve
Nicola founded Single Variety Co from her kitchen table with the aim of creating a range of seriously delicious fruit preserves and chilli jams. She carefully selected the finest ingredients, British where possible, and packed each jar full of as much fruit as possible with much less sugar than traditional jams. These aims remain the same today in our little jam factory in Bristol - as if Nicola had made them from home!
