So many people have been asking me how I like to enjoy our Golden Pineapple Preserve. So here's my answer... in a toastie! Here we've added some spring onion and chilli to the preserve to add a bit of crunch and heat, but it's also great with straight up pineapple preserve and cheese. Simple but delicious.

Golden Pineapple & Cheese Toastie

Possibly the best cheese toastie ever?
Ingredients

2 thick-cut slices bread

1 tbsp salted butter

1 heaped tbsp Golden Pineapple Preserve

1 small spring onion, finely chopped

1 tsp fresh chilli, diced, optional

100g extra mature cheddar, grated
Directions
Heat a frying or griddle pan over a medium heat to warm. Take the bread and butter each slice - the buttered sides will become the outside of the sandwich. In a small bowl, combine the pineapple preserve, spring onion and chilli, if using.
On one slice add the grated cheese and on the other, spread on the pineapple preserve before sandwiching together.
Place sandwich in the hot pan and toast on either side for 2 - 3 minutes until golden and crisp and the cheese in beautifully melted inside.
Remove from the pan, slice in half and serve!
