So many people have been asking me how I like to enjoy our Golden Pineapple Preserve. So here's my answer... in a toastie!
Here we've added some spring onion and chilli to the preserve to add a bit of crunch and heat, but it's also great with straight up pineapple preserve and cheese. Simple but delicious.

The natural sweetness and acidity of pineapple cuts through the richness of cheese, balancing each mouthful. Using a high-fruit preserve rather than tinned pineapple intensifies that flavour without the excess liquid, which means a crispier toastie and a much better result.
What cheese works best in a pineapple and cheese toastie?
A mature cheddar is the classic choice and for good reason: the sharpness stands up to the sweetness of the preserve. Gruyère works beautifully if you want something a little more melty and nutty. Avoid anything too mild or it'll get lost.

This recipe is really a starting point. Once you've got the pineapple preserve and cheese base sorted, you can take it in lots of directions like adding sliced jalapeños if you want more heat or using it as a quesadilla filling!
