Limited Edition Invicta Gooseberry Preserve

Gooseberry season is short, and the Invicta variety is the one worth waiting for. Large, firm, pale green berries with a crisp texture and that perfect balance of sweetness and tang that makes a great gooseberry jam. We cook them in small batches with a squeeze of fresh lemon juice, and the result is a jar that tastes like a British summer!

Invicta is one of Britain's most celebrated gooseberry varieties, beloved by growers for its exceptional flavour and the generosity of its crop. If you've ever grown gooseberries yourself, there's a good chance this is the one in your garden. One of the things we love about it is that every batch is slightly different: sometimes the preserve cooks to a beautiful pale green, sometimes it takes on a gorgeous orangey-red hue. Completely natural, completely unpredictable, and part of what makes this one so special.

At Single Variety Co, we are passionate about creating a truly premium range of award-winning chilli jams and fruit preserves, making everything ourselves in our family run jam factory in Bristol. For our gooseberry jam we source the tastiest British gooseberries we can find (the Invicta variety) and then pack each jar full of it using much less sugar than traditional jams. We use just one variety in each of our products - showcasing the unique flavour, colour and aroma of that single variety. Hence the name!
