Bergeron Apricot Preserve with Almond Chicken Recipe

Almond Chicken

Ingredients

Blanched almonds
Chicken breasts
Seasonings - Garlic powder, dried oregano, smoked paprika, salt and pepper
Large egg
Olive oil

Method

1. Preheat oven to 190C/170C fan/gas 5
2. Place almonds and seasoning into a food processor and pulse until finely chopped (if you don't have a food processor - place almonds and seasoning into a bag and crush together finely) and transfer onto a shallow plate
3. Beat egg and transfer to a wide bowl
4. Season the chicken with salt and pepper on both sides and then dip into the beaten egg, coating both sides
5. Press the chicken lightly into the almonds, flip chicken over and press again, covering both sides
6. Heat olive oil in a skillet over a medium-low heat. Once oil is heated, cook chicken for 2 and half minutes on each side until beginning to golden
7. Transfer chicken to an oven dish and oven cook for a further 15 minutes at 190C
8. Ready to serve

Sautéed Spinach

Ingredients

Spinach
Olive oil
Salt to taste

Method

1. Wash and drain spinach to remove excess moisture
2. Heat 2 tablespoons of olive oil in a pan over medium-high heat
3. Add spinach and toss with tongs or a spatula to cover with oil while cooking
4. Cover the pan for one minute. Uncover and turn over spinach. Re-cover for a further minute
5. Remove from heat and drain any excess oil. Serve immediately

Honey Roasted Carrots

Ingredients

Carrots
25g clear honey
50g butter cut into pieces
Chopped chives

Method

1. Preheat oven to 200C/180C fan/gas 6
2. Add the carrots, honey, butter and 150ml water into a deep roasting tin and season
3. Bake for 1 hour until sticky and tender
4. Serve with scattered chives
