For something a little different with your Sunday roast surprise your guests with these chilli glazed carrots. The recipe works well with any root vegetable, such as parsnips or sweet potato.
Ingredients (serves two)
8-10 Carrots (we used Heritage carrots in different colours), washed and scrubbed
2 tbsp Anaheim Chilli Jam
1 tbsp Vegetable Oil
Sea Salt & Pepper
Preheat oven to 180*C
Mix Anaheim chilli jam with the olive oil and a pinch of salt and pepper in a small bowl
Place carrots in a roasting tray and drizzle the chilli jam over evenly.
Sprinkle the fresh thyme leaves over the carrots.
Cook for 30-40minutes until the carrots are soft and slightly caramelised.
